Cordelia Running

Dr. Cordelia Running believes that food should taste good—even when it’s healthy for you, and even when you aren’t healthy. Moreover, she believes that food should not be frightening. As an assistant professor of Nutrition Science and Food Science at Purdue University, Dr. Running studies Saliva, Perception, Ingestion, and Tongues (SPIT) in her research to help people to stick to healthful yet palatable diets. She also teaches several classes and participates in various community engagement projects to educate people about food ingredients, food technology, and nutrition.
