The International Society of Neurogastronomy Symposium will take place immediately before Pangborn 2025 at the Pennsylvania Convention Center, August 16 – 17, 2025.

The International Society of Neurogastronomy (ISN) is a professional society founded by chefs, neuroscientists, agricultural scientists, and health care professionals. It is devoted to the study of how flavor sensations are created, what the brain does with flavor information, and the behavioral and physiological consequences that result. ISN works to translate this knowledge into uses that promote healthy diets.

ISN symposia feature taste demonstrations and illusions, announcement of the winner of the Gina Mullin Challenge cooking competition, 10 distinguished speaker and two panel discussions. The 2025 ISN symposium emphasizes these themes:

  • Food preference
  • The brain’s reward system in food preference
  • How aging and related diseases affect food preferences
  • Nutrition for individuals with dementia
  • The physiology of flavor sensations

These events are available free of charge to all registered delegates. Details of how to attend will be mailed to all registered attendees on June 2, 2025.
