Naïs Pirollet first worked in Michelin starred restaurants, at Saisons in Lyon and at David Toutain’s in Paris . Then in 2020 she joined as R&D specialist the French Team for the BOCUSE D’OR 2021, the worldwide most famous gastronomy competition, with Chef Davy Tissot, who won the contest.
After national and European selections, Naïs represented France at the BOCUSE D’OR 2023. After 5 hours and 30 minutes of competition, Naïs made it into the top 5 in the world and she won the prize for the best « Feed The Kids » menu out of the 24 teams in competition !
During the workshop Naïs will explain how she prepared herself for the international competition with a particular emphasis on the study of the role of senses. She will present some examples of her creations and tell the story of their colors, shapes, textures, tastes, aromas … to reach the expected results, deliciousness including health and sustainability!
