Dr. Han-Seok Seo is an Associate Professor and Director of the University of Arkansas Sensory Science Center in the Department of Food Science at the University of Arkansas. His research program aims to improve everyone’s well-being by optimizing sensory components that promote healthy, happy, sustainable, and smart behavior in the consumer-food-interface. He holds two doctoral degrees, a Ph.D. in Food and Nutrition (supervisor: Dr. Inkyeong Hwang) and a Doctor of Medical Science in Otorhinolaryngology (supervisor: Dr. Thomas Hummel) from Seoul National University (Seoul, Korea) and the Technische Universität Dresden (Dresden, Germany), respectively. He has worked as a coffee barista and manager at Café FANCO (Seoul, Korea) with national certificates of Hotel Manager and Sales Manager. He serves as an Associate Editor (Food Research International), Section Editor (Current Opinion in Food Science), and Editorial Board Member in multiple journals including the Food Quality and Preference, Foods, Journal of Culinary Science & Technology, Journal of Food Science, Journal of Sensory Studies, and Korean Journal of Food and Cookery Science. He is also a founder of the Sensory Science Journal Club opened to the public around the world (since March 2020) and the Science-Telling About Revolution (STAR) in Sensory Nudges conference (in 2022).
